We make this wine for those who seek the driest, most mineral-driven Riesling. This wine is crisper with brighter acidity than its companion in our line-up, #239 Dry Riesling. Even in this drier style, you will still find the balance among acidity, residual sugar and flavor.

Ice Wine is a dessert wine made from grapes left out in the vineyard into the winter to de-hydrate under the steady rays of the sun. We are able to pick the fruit for Ice Wine once temperature reach 15 degrees F or lower. At these low temperatures, any water left in the berries turns to ice. These dehydrated grapes/raisins give the Ice Wine juice an earthier, honey-flavored quality which is a distinctive characteristic of this wine.

Our Dry Rosé is made from Cabernet Franc grapes that have been left on the skins long enough to give the wine a light, fruity color, body and flavor. Cabernet Franc is the signature red grape of the Finger Lakes and is versatile enough to be made in many styles, including Rosé, varietal Cab Franc and red blends.

For this style of slightly-sweeter Riesling, we aim for balance between acidity and residual sugar. With the higher degree of residual sugar you also find lower alcohol which is also part of the charm. This “sweeter” Riesling is perfectly balanced and a perfect pairing with spicy Asian food.

We picked the fruit for this wine as late as possible in the season. Our aim is “ripeness.” We stopped the fermentation at a point when the wine retained a higher level of residual sugar, but still a significant amount of acidity. The result is a rich, luscious wine that is still lively and bright.

Every year, we aim to make a fruit-driven, dry Riesling which has an explosive flavor profile. Each year, the growing season is different which results in “vintage variation.” The 2021 Riesling Dry #239 is a wine that will improve with age. In its youth it is restrained, but after a year in the bottle it opens and delivers complex, layered Riesling character.

This is our most approachable Riesling. Not too sweet and not too dry. We use very ripe fruit which delivers luscious tropical flavors. The result is a wine that is extremely food-friendly and pleasing to enjoy by itself.

Unoaked Chardonnay has a clean, fresh quality that pairs well with food. To soften the acidity in the wine, we leave the wine on the yeast bodies after fermentation is complete. This “lees contact” adds a creaminess to the wine. The result is a bright wine with a rounded quality and no sharp edges.
