Nose
Fruity, floral aromas of ripe white peach, fresh apricot, cherry blossom, honeysuckle, and sweet almond oil with a satiny.
Palate
Vibrant, bone-dry medium body and a sleek, layered, medium-length shale, tart lemon gelée, and dewy grass finish with fine, fruit tannins and no oak. Highlights of minerality with notes of apple and quince. Light finish notes of toasted marshmallow.
Winemaking
FERMENTATION: Cold, stainless steel.
Aging
Aged eight months in European Black Locust acacia barrels for a light, special toasted flavor.
Food Pairing
Pairs well with traditional dry wine foods, including cheeses such as Parmesan. Lovely with seafood - crab and shrimp - as well as fish and poultry.
