Harvest

Grapes were hand harvested from our Estate at the optimum level of ripeness and acidity from a very low yield vine.

Winemaking

From our vineyard the grapes were delivered to the winery where they were immediately pressed. Cold settling for two days and cold fermentation with an aromatic yeast strain. This wine had no oak contact and Malolactic Fermentation was avoided.
