Harvest

A total of 6.66 tons of estate grown Riesling grapes were harvested on October 19th through the 21st, 2020 with 22 brix natural sugar, 0.81 g/L TA and a pH level of 3.19.

Winemaking

Ripe orchard fruit, citrus/grapefruit, blood orange, slate. Medium bodied, mouth-watering, lingering. Intense! Great follow-up of the 2019 vintage.

The grapes were crushed, partially cold soaked, pressed and inoculated with yeast. They then went through a 20 day fermentation at 59-60 degrees. Next heat and cold stabilized and filtered.

Aging

The wine was then aged in stainless steel tanks until being bottled on May 5th, 2021.
